Another week begins! I can’t believe how quickly last week flew! How was your weekend?
We went for a walk and Snuff found her first fall leaf.
Then, a neighbor saw us walking down the sidewalk (I let Snuffy walk on the sidewalk like a “big girl” when we’re in our neighborhood) and gave Snuff a flower from her flower bed.
I checked the mail upon arriving back home and I found an early birthday “gift”
Nice but, I don’t usually buy salon products. Sweet of them to send it though. However, this is a reminder that my birthday is quickly approaching! What does that mean to you? NO MORE BLURRY PHONE PIX!!
Snuffy and I took a long overdue trip to Trader Joe’s. We went to Whole Foods and Wal-Mart (gasp!) as well. Some of you may know by now that I tend to shop at at least three stores for the best deals. Usually those three stores are Kroger, Whole Foods and Wal-Mart because they are all so near one another. But, on Saturday we were going to be right accross the street from Trader Joes’s. I got a coupon in the mail for a FREE pair of VS panties, no purchase required! Naturally, we had to go to VS. I also got fitted for a bra while I was there. Everyone should seriously get fitted. I have gone twice . The last time was right after I went back to school and I had lost a lil weight due to the new stressful schedule. This time I measured at at 32 instead of the 34 before and I went up a cup size. Amazing what ten pounds can do. I do look better with the ten pounds on. But, how did I go down in circumference and up in cup size? I don’t know, but, I’ll take it! I will probably continue to buy 34’s though just because I don’t like the tight feeling.
I didn’t snap pix of everything because much of it is redundant week to week. As you know from last week, I packed Snuffy’s lunch on the days when I knew the food would be processed to the extreme and full of unhappy meats. Well, I felt I may be taking it too far. I didn’t want to be a crazy, overprotective mama. So, I didn’t pack on Friday. Yup, I let her eat beef pot pie. The result? She apparently ate almost half the beef pot pie and she had …errrr…major tummy issues (you know what I mean) . So, now the overprotective mama is back. I will be packing for her almost everyday. So, we had to get some more Snuffy lunch goods! The toddler room has no fridge and no microwave. So, in order for Snuff to eat when the other kids eat, I have to make sure her food will keep well in her lunchbag with an ice pack. I also have to pack things that don’t have to be heated.
Snuffy eats string cheese (from happy cows 🙂 at least once everyday. In fact, “cheese” was one of her first words.
Trader Joe’s has these organic fruit cups for the same price I usually pay for the regular fruit cups at other stores! Today, I asked Snuff what she wanted for lunch and she grabbed one and said “fruit!”
Lara Bars for kids!!! They were way less than a buck each too! Uh Oh I’m starting the LARA habit early….
Normally, I just give Snuffy her Veggie Dogs plain with some fruit and Cheddar Bunnies. But, I thought for lunch she may want to have a bun like the other kids. Plus, since it IS a veggie dog and she has been known to steal veggie dogs straight out of the fridge, she could eat it without it being warmed…right?
When I saw these initially, I thought, “Those are definitly NOT real peas and they are probably full of preservatives, fillers and good marketing.” But, I was wrong
INGREDIENTS: GREEN PEAS, CORN OIL, RICE, SALT, CALCIUM CARBONATE, ASCORBIC ACID (VITAMIN C).
It’s not stellar but, it isn’t THAT bad. I think they’re pretty darn tasty too!
I’ve seen these around the blog world and the ingredient list is great! So, I thought if I heat one in a pan to crisp the edges, I could put it on a bun for Snuff’s lunch…I hate that they don’t have easy access to a microwave. I know they probably could microwave her food. But, I have this image of her sitting there, waiting, watching all the other kids chow down…
This was something that I had been meaning to pick up everytime I go to Trader Joe’s. I always forget! I can’t wait to try it!
Obviously, a Whole Foods find. I love that they have their own brand of organics. To clear up confusion, I don’t need EVERYTHING WE EAT to be organic. Most of what I buy is not organic. I do, however, need food to be free of “extras”. I prefer that foods be free of chemicals, preservatives, additives, unhappy animal meat (happy animals are sometimes okay), and non-food substances.
Anyway, the ravioli was inexpensive and Snuffy loves it!
Since Mallard was away all weekend, I wanted to bake him something to welcome him back home. It’s true, you know: the way to a man’s heart is most certainly through his stomach!
I settled on banana bread due to our over-abundance of over-ripe bananas.
I modified a recipe from my most used cookbook
I used these to modify
Bake: 55 minutes
- 2 cups all-purpose flour I used all whole wheat pastry flour
- 1-1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 2 eggs, beaten I used cage free
- 1-1/2 cups mashed banana (5 medium)
- 1 cup sugar I used turbinado
- 1/2 cup cooking oil or melted butter or margarine I used melted Earth Balance
- 1/4 cup chopped walnuts I omitted these for Mallard
- 1 recipe Streusel-Nut Topping (optional) I didn’t take them up on that option
1. Preheat oven to 350 degrees F. I baked at 330 for 1 hour and 15 minutes 🙂 Grease bottom and 1/2 inch up the sides of one 9x5x3-inch or two 7-1/2×3-1/2×2-inch loaf pans; set aside. In a large bowl combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Make a well in center of flour mixture; set aside.
2. In a medium bowl combine eggs, banana, sugar, and oil. Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be lumpy). Fold in nuts. Spoon batter into prepared pan(s). If desired, sprinkle Streusel Topping over batter.
3. Bake for 55 to 60 minutes for 9x5x3-inch pan or 40 to 45 minutes for 7-1/2×3-1/2×2-inch pans or until a wooden toothpick inserted near center comes out clean (if necessary, cover loosely with foil the last 15 minutes of baking to prevent overbrowning). Cool in pan on a wire rack for 10 minutes. Remove from pan. Cool completely on a wire rack. Wrap and store overnight before slicing.
4. Makes 1 loaf (16 slices)
5. Streusel-Nut Topping: In a small bowl combine 1/4 cup packed brown sugar and 3 tablespoons all-purpose flour. Using a pastry blender, cut in 2 tablespoons butter until mixture resembles coarse crumbs. Stir in 1/3 cup chopped walnuts.
So we started with our bananas
and we moved right along.
Everything was going well until I decided, after 25 minutes, that the bread was not cooling quickly enough for me. So, I ran a knife around the edge of the loaf and turned it upside down on a plate…rookie mistake. I know better than to rush things. I used to bake at least twice every week! But, for some reason I had to hurry things along.
What did I do? I scraped the piece from the loaf pan and replaced it on the inverted loaf. I let it cool. I sliced it .
Mallard still doesn’t know that I am a Banana Bread failure 🙂
I also made Snuff a Banana Bread Pudding by modifying the same recipe. Yes, we had LOTS of over-ripe bananas! We usually go through them like water but, for some reason, we just hadn’t been feelin’ them last week.
To modify the recipe to make Banana Bread Pudding, I lowered the flour to a cup of Whole Wheat Pastry Flour, I added 3/4 cup of unsweetened apple sauce and I cut back on the baking powder. I baked it at 300 until it was set…I’m sorry I don’t remember how long it took.
It was a hit!
Yes, she was covered in ‘nana stickiness after this and yes, she did get a bath immediately after her tasty treat 🙂
Today, I started with yoga as has become my favorite Sunday tradition. I love it. I feel so good after yoga. I have a long day of studying ahead! Mallard got back before I left for yoga and took over the parenting post. I have an Anatomy and Physiology exam coming up in two days!!! I have zero study time other than today!
Shout out to my little sister, Jillian, who turns 16 in 16 minutes !!
Happy Birthday, Aunt Jilli!
Do you buy your hair products at a salon? I bought my flat iron from my salon but I haven’t bought other salon product since I moved so far away from my mom’s salon and I use mostly earth-friendly products.
If you are a label-reader, have you been surprised by the ingredients in any of your favorite foods?
What do you pack in your lunch? Spill it, ladies!! and err…I think I have one guy reader, so you spill it too! 😉
Show your body some love!
Like the seasonal Starbucks menu, all things must change. But, before we get to those changes, how was your Labor Day weekend? Mine was fairly mellow. We bought Snuffy some new shoes at the outlet mall on Friday, I worked Saturday, then Sunday we went to Babies R Us to look for baby gifts. I swear everyone seems to be expecting lately!
While we were at Babies R Us, we found these !
Snuffy gave them 5 stars! I tried the pomegranite flavor and it was awesome! I like things really sweet and these certainly fit the bill.
Mallard asked for more carnivorous creations this weekend…another Giant Pizza Roll
I used a refridgerated pizza crust because that’s what the crazy man prefers!
I spread about 1/2 cup of sauce onto the crust and topped with mozzerella.
Then I added Mallard’s favorite pizza topping
I rolled it all together and pressed the seams of the dough tightly closed. Then, I scored the top and sprinkled more mozzerella
I baked at 425 until it was dark golden brown (Mallard’s preference)
I couldn’t even get a pic before Mallard cut into this bad boy!
Now for the changes at hand…
First of all, Snuffy’s babysitter is due…well, today with her third child. So, Snuffy will have to go to the daycare center near our home for a few weeks. She has been there before for two days while our regular babysitter was on vacae. She seemed to do fine. But, they don’t provide the MOST nutritious meal. Sure, there is usually a fruit or veggie involved. But, snacks include “juice” made of non-organic fruit and who knows what else. Sugar cookies and preservative-filled grahams are other frequent snack stars. The meals are okay by dietetic standards. Some of the meals I would prefer not to give my lil one: BBQ pork because I don’t know what kind of chemicals and “crap” are in the sauce and in the meat. The other meal that I don’t really want to give Snuff is their ravioli as I’m sure it’s generic canned …junk. So, I wanted Snuffy to have a nutritious lunch without feeling like she is not getting what the other kids have. Solution? Same idea, different version!
On Ravioli Day (tomorrow) I packed Snuffy the same meal on the menu only in a junk-free version
Snuffy kept asking for bites as I was packing her lunch. So, she tried this cold (I felt like a bad mom). But, she loved it! I have to say, it’s not bad. Yes, it’s a bit more expensive than Chef you-know-who. However, she can get at least three meals out of a can since she eats it with a fruit and a vegetable! For her lunch, I packed a Snuffy serving of ravioli, a serving of peas and a serving of oranges. It was exactly what was on the menu for the other kids 🙂
She even got a cool , new lunch bag that she picked out!
When I bought it, I didn’t look at it closely. I thought it was an eco-friendly BUILT lunch bag like mine. But, looking closer, I noticed that the tag says it’s made by BUILT but I don’t think it’s made of eco-friendly materials…lunch bag fail.
Oh well! I also got Snuffy some an alternative to the unhappy pork with mystery BBQ sauce
Whole Foods had a coupon for this in The Whole Deal this month so it was an easy and inexpensive alternative!
I also packed some junk-free snacks for Snuffy to keep at daycare.
These were another change for Snuffy. She love them though! She was on a hunger strike on Sunday until I opened a box of Bunny Grahams!
You must know that Snuff can’t survive without Cheddar Bunnies
She’s cool like that
As I had told you in a previous post, I have been in a bit of a food rut lately.
So, I took advantage of the Whole Deal coupon for these
I swear I have seen these on Jenna’s blog. But, I can’t seem to find the exact post.
And now for NEW NUT BUTTERS!!!!!!!!!!!!
I had some samples of this from Starbucks a few months ago and I really liked it! I didn’t want squeeze packs though due to the waste of packaging and I finally found it in a jar!! Plus, I haven’t been able to find Mighty Maple anywhere! Does anyone know what is going on with that? It was my fave. But, Justin’s Maple AB may replace it.
And now for the star of the show
I didn’t even know this existed until I saw it on the shelf! I can’t wait to try it. Reviews to come!
If you have read my blog lately, you have seen how much I love my nut butters.
(Dark Chocolate Dreams+Cashew Butter+Naturally More)
You may also notice that I almost always pair nut butters with fruit and veggies
Well, I have been having some major tummy aches in the mornings. I have begun to wonder if it has anything to do with my last snack of the evening which is usually nut butter and fruit or veggies. I know that it’s not the best thing to be eating in the evening. But, it’s become a staple in my evening unwinding. Digging deeper, I found some info on food combining while reading Gena’s blog. According to food combining guidelines, fruit should be eaten by itself and on an empty stomach. Could this be the source of my tummy troubles? The guidelines list vegetables as “neutral” which means they can be combined with any of the other food groups. Am I destined to eat my nut butters with celery and carrots for the rest of my life? I sure hope not! But, I suppose I owe it to myself to change up the routine and see if bad food combining is the issue. I am tired of feeling bloated and crampy in the morning…and NO I AM NOT PREGNANT. I have an IUD for those of you who are wondering. I won’t be having any more children any time soon as it lasts up to 10 years!
Check out a GIVEAWAY that will help you further your nutritional knowledge!
I picked up some new bars to try. I’m just not a bar person. I went through a phase when I ate a Kashi Go Lean Chewy bar every day when I went back to work after maternity leave. I don’t now if I got burnt out on bars or I just like “real” food? Either way, my days are so long most of the time that it’s not feasable for me to pack food for that long of a time period. Also, there are so many bars on the market that are made with natural ingredients and no “junk”. So, I thought I would give these a go.
And I picked up this guy on a whim
Hmm..75 percent organic, 100 calories…we’ll see how it goes.
I also made an effort to reduce my risk of breast cancer
NOW FOR SOME BIG BLOG NEWS
I have been working with someone on a blog makeover! The new and improved Whole Body Love will be up and running within a few weeks! I will keep you updated.
Many of you have read about my anticipation of my birthday and the “birthday fairy”
It’s obvious that the camera on my phone is just NOT cutting it! I’m sure you noticed that all my pics are blurry and dark. So, after speaking with the “birthday fairy” , I was informed that I will be getting a camera for my birthday. I thought I may have to compromise on the camera I want. But, since Mallard’s job is going decently well, I get the camera I want! This means that after the nineteenth, there will be much better pictures on my blog. In fact, once I get my new camera, I plan to photograph almost all of my eats and do more experimenting with new foods and recipes! So, be prepared for food porn!
What color do you like? I’m leaning toward GOLD but, RED would be easier to find in my purse. What do you think?
Have you ever given any thought to the “food combining guidelines” or eating a high raw diet?

Hola Amigas! That’s right I only had a lil college Spanish but, I try…sort of. I know you all probably had some freaky wild weekend nights, but I cannot say the same for myself! Mallard’s aunt, uncle and cousin drove from Illinois to visit. They live in an EVEN SMALLER town than the one I grew up in. I’m talking a gas station and no stoplights! Mallard’s sister, brother in-law, and niece made the 3 hour trip from their homestead to meet up at Mallard’s parents’ house. It’s an hour drive there for us. Snuffy likes to go because she gets to hang out with her homegirl, Audrina (Mallard’s niece).
If you can’t interpret Snuffy Speak, that look means, “Yeah, Mom, I’m climbin’ the stairs. But, we’re at Grandma’s house so watchu gonna do ’bout it?”
The girls don’t see one another very often. But, they always fall back into their old routine.
Time for a little known fact: My daughter has a night job. That’s right, she is the musical entertainment during the cocktail hour.
We just have to keep strong family ties so that Britney Snuffy stays true to her morals!
All in all we had a good visit with the outlaws. But, get this: when they woke up this morning, their car had been stolen! I know!! Mallard’s parents live in a suburb of Dayton and it’s a decent neighborhood. But, there had been other “break ins”. Basically, unlocked cars were the target and Mallard’s cousin had left the keys in his parents’ car. So, the culprits just took it! CRAZY!! They have been on the phone with their insurance company all day. Mallard is golfing with his uncle, dad and cousin today. The Law ( I love calling them that) was there when he arrived. I didn’t realize Dayton suburbs were so rough lol! Mallard’s parents better watch themselves on the real.
Today, Snuff and I went to run our weekly errands since I worked yesterday. This included Starbucks,
Wal-Mart ( they are the only store around that carries naturally more PB! ) We actually went to Kroger before the others. Every week Kroger seems to add more to their natural and organic section! I love it! I can buy all but a few items there now! Now that you know I went to 3 grocery stores, I betcha wanna know what I got….
Organic “toaster pastries” (For Snuff). Not the most nutritionally balanced. But, better than the alternative. This way she can experience the pastry without the preservatives.
Organic American Cheese—-Snuff loves grilled cheese! If all else fails, I know that’s something she will eat.
New Cereal–I saw this and it reminded me of childhood and Cinnamon Toast Crunch. But, I don’t like to put preservative laden food into my body. So, although it’s no Flax Plus, I thought this to be a better option than CTC.
Yogurt–For my yogurt messes! I love love love yogurt messes!!!
Snuffy’s raisins–easy, portable, organic
Tea–yes, not organic, far from perfect. But, a summer staple in our home.
Amy’s Meals–I tried Indian food for the first time with Amy…aw! Like anyone with tastebuds, I love Amy’s everything! I do have to keep it to a minimum due to the higher price. Personally, I think the price IS worth the quality.
Boca Chicken- I really like the taste of these. But, I struggle with the purchase because they ARE processed. They are supposedly “made with natural ingredients” which makes me feel a lil better.
Smart Dogs- These are mostly for Snuffy. Once again, far from perfect but better than the alternative.
Vegetarian Chilli- Yes, I know I could make my own. I bought this on sale once and REALLY liked it. So, when I saw it today, I picked some up. However, the ingredient list was too long to even get a clear picture! So, I doubt I will buy it often. I don’t know why I was drawn to processed vegetarian food today!!
New salad dressing! I was looking for a new dressing and the produce guy a WF suggested this. Not a “light dressing” but only 70 kcals per serving because it is yogurt based! Pretty groovey. I will let you all know how it works out.
Baby Spinach- a must have.
Cucumber- ON SALE FOR 50 CENTS! I will use it for Hugh Jass salads with baby spinach, squash, anything not moving in the fridge…
Plum-I realized that my fruit consists mostly of bananas, apples, pears and (cringe) an occasional Dole fruit cup. (If you aren’t aware the Dole fruit cups in light syrup have added sugar and HFCS. I can’t find mixed fruit with cherries in it’s own juice!)
Gotta keep Snuffy supplied with her yogurt raisins
Kickin’ It Old School with this next one…
After the luncheon last week, I took home the leftover celery sticks. I had forgotten the simple delight of celery with PB! It was awesome with my Naturally More. That’s why I ran out! So, now I’m addicted and I must replenish.
I picked up some kale to make kale chips…
But, it will be going back to Kroger! EWWWWW! No kale chips today…
I did get some radishes though! $1.99! I couldn’t pass ’em up for some Radish Chips!!
I cut off the tops and bottoms (I try not to waste too much though)
Then, I use my grater (madalin side?) to slice ’em up!
I use an olive oil spray to “grease” my cookie sheet. Then, lay the slices of radish in a single layer and drizzle with some EVOO ( I feel so Rachel Ray without the Dunkin’ Donut plug).
I sprinkle with a lil of this
And I bake them at about 425 for 15 to 20 minutes. CAUTION –time may vary. Check them often if you are making these at home. I like mine fairly crispy
If you find they are taking far too long to crisp, you can remove them from the cookie sheet, toss them on a plate and microwave them for 20 seconds.
I also made my famous Tiny White Cheetahs (okay maybe just famous with Snuffy). I start with red potatoes.
Slice them in strips or wedges
Place them on a EVOO’ d baking sheet and sprinkle them with a touch of sea salt. Then, slide them into the oven and bake them at 425 for 7 minutes. Turn them over with a spatula and bake ’em for 7 more minutes.
They come out looking like tiny white versions of snackface cheetahs!
**UPDATE* *The stolen car was found in the middle of a field. The car is badly damaged but drivable. Of course the GPS unit was missing. The theives also took the prescription medication from the glove compartment. The important thing is that everyone is safe! 🙂
BTW: Heather is appropriately giving away some almond butter! Check it out and you could win some antioxident rich AB!!
What Would You Do…
if you bought some produce and realized it was less than edible AFTER you got home?

Grandma Rose’s Sugar Cookies
2/3 cup shortening
1 teaspoon pure vanilla extract
4 tsp. milk (why 4 tsp. I do not know she has just always done it that way lol)
2 cups sifted all purpose un-bleached flour
1 tsp. baking powder
1/2 tsp baking soda
1/4 tsp salt
Pre-heat oven to 375 and spray cookies sheets with non-stick spray. Sift dry ingredients into a large bowl and set aside. With an electric hand mixer or stand mixer ( I use my Kitchen Aid), cream together shortening, sugar and vanilla. Add milk and egg and mix until fluffy. Add dry ingredients in small portions until incorporated. But, be careful not to over-mix. You don’t want “tough cookies”. Divide dough in half, wrap in wax paper and chill for 3 hours or overnight. (Sometimes I do that sometimes I put it in the freezer for 5 minutes.) Roll one half of the dough onto a lightly floured surface and cut into desired shapes.
The original recipe says to roll it to 1/4 in thickness. I make mine a little thicker. Place shaped cookies on sheet and bake for 8-10 minutes. I like to underbake mine slightly. But, that’s all preference. Remove them from the oven and let them cool. Frost with your favorite homemade or store bought frosting and enjoy!!
The second cookie request was for gooey butter cookies. These a decadent and so easy to make! You can view the recipe here.
The third request is for a recipe that I have devised from my own preferences. I use this as my go-to quick and yummy recipe for BBQ’s and family gatherings. I originally adaapted it from Better Homes and Gardens. But, after omitting the oatmeal and adding more flour, taking out the nuts and adding lots of chocolate chips and doubling the PB. I feel like I have kind of adopted it. Yes, I do mean adopted not adapted. This time, I also added a finely chopped Kashi bar…
I used to eat a Chewy Kashi Go Lean bar for lunch almost every day! They seriously taste like candy bars. Not to say that they are junk. I don’t think that. But, I am moving farther away from processed foods. These bars also taste like candy bars for a reason. They have a decent amount of sugars and a few preservatives.
Did I indulge in some cookie goodness? No. I see no problem with the occasional indulgence. To me, that indulgence should be something special. It should be something that I’m not able to have all the time: my Nan’s homemade chocolate pie, freshly made dessert at an organic restaurant, a dessert made from seasonal ingredients that are only freshly available for a short time. The cookies that I made today are something that I could whip up any time that I choose. I have the recipes memorized. This, to me, is not worth the indulgence. But, please don’t deprive yourself all of the time or beat yourself up when you eat something for the taste and the way it makes you feel! Life is too darn short. 😉
So, you know I want to know…especially from a certain RD….what do you guys think about occasional indulgences? How has your treat philosophy changed over the years?
Once again, I am sorry for the blurry pics. I can’t wait to get a new camera! Two months until my birthday!!

Hey guys! I’ve missed you so! Hope you all had a fantastic Fourth! We didn’t do much because Ms. Snuffy was a bit under the weather which = no sleep for Swan. Oh well! This morning Snuffy and I did our weekly grocery shopping. I know it seems like I just posted groceries. But, to be fair it was a day or two after we had actually gone. Today we visited Whole Foods (of course!) and Wal-Mart (cringe!). We had to go for Mallard. Hey, after 3 years I have finally gotten him to switch to natural PB…that is an accomplishment! You may also see his beloved Sweet n Low in the background of some of my pics today. Wal-Mart was the only store that had his fave ranch dressing. Plus, I found these neat flax pitas there!
The ingredient list didn’t look too bad. So, we will see!
At Whole Foods we found some of my favorite nut butters and some agave and coconut oil for some new recipes that I want to try!
We also had to grab some produce. I swear we go through bananas like water around here!
…and a new brand of spinach that I have never tried!
I saw the word locally and then I realized it was just the brand name because this is actually grown in Maine. 😦
I replenished our dairy/non-dairy section of the fridge as well. There is coconut milk too that you can’t see in the pic
Oh and I guess my TJ’s almond butter made it in there…love that stuff!
I also got some TVP for recipes. Do any of you use this or have good recipes for it?
Have you guys ever tried this? I am weening myself off artificial sweetener and I am out of Stevia. Any thoughts on Truvia?
I was delighted to find a plethora of Annie’s BBQ flavors! I chose this one. But, I am not letting myself open it until I finish the one I’ve got.
My most exciting purchase was…………………………………………………………..
My very first shaker! Complete with sample goodies!! I can’t wait to use it!
After we got home from our grocery excursion, Snuffy took a nap. Then, Mallard took us to the driving range! Snuffy nor I had ever been. That’s right, I had never even held a driver until today! Neither had Snuffy lol. Mallard gave us some pointers.
I have to admit that I was not so great. I only made contact with the ball a few times.
But, I had fun and that’s what counts, right?
Snuffy had a good time as well.
Snuffy did eventually get a lil hungry and a lot cranky. We decided to call it quits. When we got home I gave her one of these yummy lil delicias that I made using a recipe from Carrots n Cake! Snuff loves them!
Next, I set out to bake some of Veggie girl’s famous blondies! I used some locally made apple butter for the fruit spread.
I also used ww pastry flour because I didn’t have gluten free. 😦
I did have molasses that I hadn’t tried yet
Unfortunately, they weren’t vegan since I added white chips to them. Mallard loves White Chocolate. Yes, I have tried to explain that most white chocolate is mostly non-food but, it’s a lost cause, kids. Anyway, the blondies turned out well. They had a slight cinnamon apple flavor due to the apple butter and the white chocolate actually complimented that flavor nicely.
While I was baking, I sipped on a venti no-classic black tea with light ice…say that five times fast!
Since Mallard has lost his mind and refused to listen to his Swan, he has started low-carb (cringe!). Being a loving Swan, I made him a low carb cauliflower casserole.
It had cauliflower, organic sour cream, bacon, and loads of shredded cheese. Hello heart attack!
My good deed may not go unnoticed(sp?). While making fun of me for photographing my creations, Mallard insinuated that the Birthday Fairy may bring me a camera that I want! I looked at a couple today and I think I want one with at least 10 megapixels and 4 or 5x zoom. What do you guys think?
What camera would you reccommend?

Hey guys! I am so sorry to leave you hanging! On top of my website building issues, I had hardware issues too! The wireless switch on my laptop quit working! I am on Mallards tiny HP Mini right now. He took my laptop to work today and the IT guy there said that we may be able to get it working by using a wireless card. I hope that’s the case because the repair would be $400 according to Geek Squad. Holy Mole’!
Anyway, I had taken off work today because my babysitter is on vacae all week. So, Snuffy and I hit up Whole Foods, Kroger and Starbucks! I have pics from our grocery adventure and from Starbucks! But, unfortunately I can’t move them from my phone onto this tiny laptop. 😦
Right now, I am making some kale chips. If you have never made your own,you are missing out on some crunchy deliciousness. Here is a lil how-to if youcare to try.Snuffy actually ate some the last time I made them! In fact , on the way home from the grocery excursion today, I looked in my rear-view mirror and saw her munching on raw kale out of my shopping bag. It wat sticking out the top because I didn’t want it to get bruised. I had to giggle. I love that she likes healthy foods. But, that kale had obviously not been washed…not a good thing, Martha. So, I had to move the kale out of Snuff’s reach. She can have some kale chips after her nap. Mallard hates it when I make them. He says it makes the house smell funny. Idon’t smell it. However, I like saurkraut and all kinds of other smelly food so maybe I’m immune!
Here are some fun kale facts via everynutrient.com:
Kale provides an excellent source of vitamins B6 and C, carotenes, and manganese.
It is also a very good source of vitamins B1, B2, and E, fiber, iron, copper, and calcium.
Kale has almost three times as much calcium as phosphorus. This is a beneficial ratio because high phosphorus consumption has been linked to osteoporosis since it reduces the utilization and promotes the excretion of calcium.
Kale and collardgreens exhibit the same anticancer properties as other members of the cabbage family.
